A Mexican-inspired vegetarian burrito bowl, full of nutrients and flavour!

Ingredients
Black Bean mix
 2 tsp olive oil
 1 brown onion peeled and diced
 2 cloves garlic minced
 4 mushrooms sliced
 2 tins black beans
 1 tin diced tomatoes
 2 tbsp tomato paste
 1 tbsp Changing Habits Cumin Powder
 1/2 tsp Changing Habits Chilli Powder
 2 tsp Changing Habits Vegetable Stock Powder
 Changing Habits Seaweed Salt to taste
 cracked Changing Habits Pepper to taste
Guacamole
 2 avocado
 2 tbsp Spanish onion diced
 1 tbsp sour cream
 juice of 1 lime
 Changing Habits Seaweed Salt to taste
 cracked Changing Habits Pepper to taste
Tomato salsa
 2 tomatoes diced
 1 tbsp Spanish onion diced
 1/4 cucumber diced
 juice of 1 lime
 2 tbsp chopped coriander
To serve
 1 cup Cooked rice or Quinoa
 4 tbsp sour cream
 4 lime wedges
 fresh coriander
 dried chilli flakes
Directions

Cook rice or quinoa.

Black Bean mix

Heat a fry-pan over a medium heat.

Add olive oil, onion, garlic and mushrooms. Cook until soft and fragrant.

Add the rest of the black bean mix ingredients and cook for 5-10 minutes, until the mixture thickens. Set aside.

Guacamole

Place all guacamole ingredients in a food processor and blitz for 5 seconds. Alternatively, mash all ingredients together in a bowl. Set aside.

Tomato salsa

Combine all tomato salsa ingredients in a bowl. mix well and set aside.

Assembly

Spoon a layer of rice or quinoa into each bowl

Add the black bean mix, guacamole and salsa.

Top with optional sour cream, lime wedges and chilli flakes.
