Garlic and Thyme Pepper Pate

A great way to make liver palatable, as a lot of people struggle to eat it otherwise. Liver is very high in nutrients, one being B12 which is important for red blood cell formation and cellular function as well as containing B6, Folate, Vitamin A and iron. Liver is a great food to add to your diet if you are anaemic, low on energy and/or fatigued.

 1kg organic chicken livers
 1/2 cup chicken bone broth
 1/2 cup coconut oil
 3 Tbsp ghee or butter
 2 tsp Changing Habits Seaweed Salt
 3 garlic cloves
 2 tsp cracked Changing Habits Pepper
 As much or as little fresh thyme as desired (we used lots)

Add all ingredients to the thermomix bowl and heat to 100C on speed 1.

When heated begin to blitz the livers on speed 8 or 9 and continue cooking until the mixture goes a light pink/ grey colour. This won’t take long, only a few minutes.

Scrape down the sides and blitz again to combine.

Taste the mixture and adjust if needed, you can add more salt, butter, pepper, thyme or garlic if needed.

Spoon some into a glass jar to store in the fridge. Scoop some into another glass jar and place in the freezer. Scoop the rest out and put into ice cube trays and freeze them. Then once frozen pop out of the tray and place into zip lock bags. You can then add these small pre-portioned liver cubes to meatballs, rissoles, stews, soups, curries etc.

Serve with rice or seedy crackers and/or with veggie sticks.
