Cyndi’s Namibian Campfire Chicken Casserole

This was a great campfire meal...

 4 garlic cloves - chopped
 2 onions - chopped
 6 chicken drumsticks
 500 g of pumpkin, cut into pieces
 800 g of white sweet potato, cut into pieces
 1 tbsp dried ginger
 1 can coconut milk

Place cast iron cooking pot over coals add coconut oil and when melted add garlic and onions fry quickly

Add the rest of the ingredients

Cook over coals until all is tender - about an hour
