Lemon and Coconut Slice

A healthier take on an old favourite

 3/4 cup organic soft butter cut into small pieces
 4 Organic or Free Range Eggs
 1/4 cup of homemade icing sugar (Finely blended Changing Habits Rapadura Sugar)
 1 tsp Aluminium free baking powder
 3/4 cup of shredded coconut
 1/2 cup of lemon Juice or more if you like it tarter
 Optional zest off the lemon skin
Base

Preheat oven to 180c

Mix flour, icing sugar and butter together until the mix becomes crumbly

Press mixture into a lined or greased slice tray

Bake for 15minutes, remove from oven

Topping

Mix sugar, lemon juice, baking powder and eggs and lemon zest if you are using it together in a clean bowl

Pour onto base ingredients

Sprinkle top with shredded coconut until evenly covered

Carefully put back into the oven

Bake for 20-30 minutes until golden on top.

Once cooled slice into squares
