Probiotic Greek Style Yoghurt

Our new probiotic blend is ideal for creating beautiful thick yoghurts, including this greek-style yoghurt. Suitable for those who can tolerate dairy. Top with your favourite fruit, or even a touch of maple syrup for sweetness.

Ingredients
 1 litre good quality organic whole milk

You will need a food thermometer to gauge the temperature.

Place milk in a saucepan on low to medium heat and bring the temperature to 90C.

Remove from the hot plate and allow the temperature to drop to 40C.

When it has reached 40C, stir in probiotics.

Stir on a low heat for 10 mins, do not heat above 40C.

Pour into glass containers (or your yoghurt maker containers and put into a yoghurt maker/heater of choice.
It is best to keep this warm, and ideally at 40C.

Leave the yoghurt to ferment anywhere between 8-24 hours. The longer you leave it, the thicker the yoghurt and the stronger the flavour.

Place in fridge for at least 4 hours before eating.

Thermomix Method

Place milk into thermomix | 30 mins | 90C | Speed 1.

Remove lid to cool quicker, until the temperature reaches 40C.

Place probiotics into the thermomix | 10 sec | Speed 4.

Then do 10 mins | 40C | Speed 1.

Pour into glass containers (or your yoghurt maker containers and put into a yoghurt maker/heater of choice.
It is best to keep this warm, and ideally at 40C.
