Summer Chia Pudding

This pudding is perfect for this time of year. With yummy Mangos and stonefruit, it is certainly a summery delight!

Chia Pudding Ingredients
 1 cup blueberries + a handful to mix through
 2 cups of coconut milk, yoghurt or cream or Kultured Wellness cultured coconut yoghurt
 1/4 cup chis seeds
 1 tbsp raw honey (optional)
Topping Ingredients
 Flesh of 2 large mangoes
 1 banana
 2 cups of coconut cream or Kultured Wellness cultured coconut yoghurt
Garnish
 Fresh mint leaves
 Fresh raspberries
 1 mango, diced
 Stone fruit, chopped
 Passionfruit

Add all chia seed ingredients to a blender and blitz until evenly combined.

Pour into a glass dish and sprinkle the extra handful of blueberries on top.

Place in the fridge to set.

Now add all topping ingredients to a blender and blitz until smooth and creamy.

Note you can also add 1 1/2 - 2 tsp of Changing Habits Gelatin to the mixture (you need to mix in a couple Tbsp of cold water, set aside to bloom the melt on medium to low heat in a small sauce pan to dissolve it then add to the mixture. This makes it set slightly and also adds all the wonderful benefits of gelatin too

Pour the mango turmeric mixture over the chia pudding and top with the garnish ingredients.

Place in the fridge to set.

Once ready, serve and enjoy!
