Tomatoey Garlic and Basil Greens

A delicious side dish to serve with fresh seafood, roasted chicken or meat.

 1 punnet cherry tomatoes, halved
 1/2 Bunch silverbeet, roughly chopped
 1/2 Bunch kale, roughly chopped
 1 Onion, sliced
 3 garlic cloves, sliced
 2 small zucchinis, sliced
 1 broccoli head, chopped into florets
 sml hanful fresh basil leaves, torn
 Butter, ghee or coconut oil for cooking
 Optional Add Ins: turmeric, tomato paste, cumin, chilli, other vegetables, pepper, other fresh herbs, lemon or lime juice.

Heat a large frying pan on medium heat.

Add the coconut oil, ghee or butter and saute the onions until golden.

Add 3/4 of the tomatoes and cook, then add the broccoli florets to begin cooking. Add a little more butter or oil if needed.

Add the zucchini to the mix and continue to stir occasionally until cooked to your liking. Now is the time to add any optional add ins.

Now add all of the other ingredients and stir through and cook until the silver beet and kale is cooked litely and has wilted.

When ready, season with salt and pepper to taste.

Remove from the heat and serve with your choice of fresh seafood, fish, roasted chicken or meat.

Option to drizzle a little home-made pesto on top.
