Slow Cooked Pork Shepherd’s Pie

A delicious heart-warming meal that is sure to become a family favourite. Perfect to whip up any time you have left over slow cooked meat - whether it be pork, lamb or beef - they all work beautifully!

Ingredients
Slow Cooked Pork
 1 tbsp butter (or oil)
 1 brown onion diced
 1 clove garlic minced
 1 kg pork shoulder
 1 cup tomato puree
 1/2 cup water
 3 tbsp apple cider vinegar
 1/4 cup molasses
 1/2 tsp all spice
 cracked Changing Habits Pepper to taste
Cauliflower and potato mash
 2 potato peeled and chopped
 1 sml cauliflower cut florets
 1 tbsp butter
 1/4 cup grated cheese
 cracked Changing Habits Pepper to taste
 sprinkle of fresh or dried basil to serve.

Slow Cooked Pork

Heat the butter in a fry-pan over a medium high heat.

Add the onion and garlic and cook until soft and fragrant. Remove from heat and transfer onion and garlic into the slow cooker.

Cut the pork into 4 pieces and place in the slow cooker.

Place the rest of the slow cooked ingredients in a large jar or bowl and mix well. Pour into the slow cooker.

Cook on low for 8 hours.

Pull pork apart with a fork and let sit for 1+ hours to really soak in the juices.

Cauliflower and potato mash

Preheat oven to 180 degrees Celsius.

Place the chopped potato and cauliflower in a large pot with water.

Heat over a medium-high heat and boil for 10 minutes or until soft.

Remove from heat, strain from water and add the butter, cheese , salt and pepper and mash well.

Assembly

Transfer the pork mixture into a casserole dish and spread evenly .

Transfer the cauliflower/potato mixture into the casserole dish and spread evenly on top of the pork mixture. Run a fork over the top to create a textured surface.

Heat in the oven for 30 minutes and for the last 5 minutes turn to grill.

Sprinkle with basil leaves to serve.
