Apple Crumble Cake

A gluten-free, dairy free, refined sugar free desert made from beautiful wholefood ingredients. One that the whole family will enjoy! Serve on it's own or with coconut yoghurt or ice-cream!

Ingredients
Apple
 3 green apples peeled and diced
 1 cup water
Cake
 4 eggs room temperature
 1/4 cup coconut milk
 1/4 cup coconut oil
 2 tsp vanilla essence
 2 cups blanched almond meal
 1/3 cup tapioca flour
 1 tsp baking soda
Crumble
 1 cup macadamias
 1/2 cup shredded coconut
 1 tsp cinnamon
Directions
Apple

Peel and dice the apples and place in a frypan.

Sprinkle cinnamon, rapadura sugar over the apples.

Add the water and place a lid on the frypan and turn up to a high temperature. When the water begins to boil, remove the lid and turn down to a medium heat to simmer.

When the apple is soft and the water has evaporated, remove and set aside.

Preheat oven to 180 degrees Celsius. Line a cake tin with baking paper.

Place eggs in a large bowl and whisk well.

Add the coconut milk, coconut oil, vanilla and sugar. Mix well.

Add the rest of the cake ingredients while continuing to stir. Set aside.

Crumble

Place all crumble ingredients into a food processor and blitz for a few seconds. Set aside.

Assembly

Spoon the cake mixture into the lined cake tin.

Spoon the apple mixture evenly on top of the cake mixture.

Spread the crumble mixture on top of the apple mixture evenly.

Bake for 20 minute or until cooked through.

Store in the refrigerator.
