Beef Date Tagine

This is an easy throw together winter warmer that is excellent for aiding weight loss. Cauli-couscous is a great low-carbohydrate alternative that is full of fibre, helping to keep your fuller for longer and balance blood sugar levels.

 500 g beef, diced
 1 tbsp ghee
 2 medium sweet potatoes, cubed
 2 zucchinis, cubed
 2 carrots cubed
 1 onion, chopped
 2 cloves garlic, crushed
 1 tsp cumin, ground
 1 tsp coriander seed, ground
 1 tsp ginger, ground
 500 g fresh tomatoes, pureed
 1 cup broth (or water)
 3 cups chickpeas
 1 lemon, juiced
 Changing Habits Seaweed Salt & pepper to taste
 Cauli-Couscous
 1 head cauliflower, cut into florets
 1 tblsp ghee or Changing Habits Coconut Oil

Heat ghee in a large saucepan over medium heat. Add beef and fry for 5 minutes. Add garlic, ginger and onion and heat until translucent. Add all spices and stir until fragrant. Add tomatoes, broth, vegetables and chickpeas; simmer for 20 minutes or until vegetables & chickpeas are tender.

Meanwhile, place the cauliflower florets in a food processor or thermomix and blend until it resembles couscous. Heat ghee or coconut oil in a saucepan over medium, add cauli-couscous and cook for 5 - 10 minutes or until tender. Remove from heat.

Stir dates and lemon juice through tagine & serve on a bed of cauli-couscous.
