A GF, DF, GrF, NF, GAPS friendly ice-cream or sorbet. It is so easy, versatile and delicious! You can use any frozen fruit that you like and I often do not add any sweetener as the fruit is sweet enough for me, especially when using seasonal produce.
Add the frozen fruit into blender bowl (do not use thawed frozen fruit - they need to be frozen). Slowly turn the speed dial to speed 10 (for Thermomix) and blend for up to 30 seconds until everything is smooth.
Now add the lemon juice and sweetener to taste (if you are adding this) and turn to Speed 7 (Thermomix) or blender for 15 seconds.
For Thermomix - place the butterfly clip into the bowl with the blended fruit, along with the egg white. Turn to Speed 4 for 4-5 minutes (until desired).
For Blender version - whisk the egg white till peaks form, then add to blended fruit
Scoop the mixture out and serve to eat straight away, or can place in freezer to eat when ready. Store any leftovers in the freezer.
When going to eat the leftovers, it will freezer harder but you can easily re-blend with the butterfly clip again to get the creamy lightness again.
