Bircher Muesli with a Twist

Most birchers found in cafes are loaded with unnecessary sugars! This is a quick and easy recipe, perfect for busy people on the go. You can make a big batch and refrigerate for a few days

 1 cup organic or gluten free rolled oats
 1/2 cup freshly squeezed orange juice
 1/4 cup organic oil-free sultanas or Changing Habits Dates
 1/2 cup organic natural yoghurt
 1 green apple, grated (with peel and seeds)
 1 orange, chopped
 1 banana, mashed
 1/4 cup grated fresh coconut
 1/4 cup almonds, ground (with skins)
 sprigs of mint or chopped nuts/seeds to garnish

Soak oats in orange juice overnight in a covered glass bowl in the fridge.

Shortly before serving add remaining ingredients and mix thoroughly.

Decorate with mint/nuts or seeds and serve chilled.
