Blueberry season is our favourite season! Whip up this beautiful blueberry compote and serve with pancakes, yoghurt, ice cream, muffins or scones (the list is endless!).

Ingredients
 1 cup blueberries
 2 tbsp fresh lemon juice
 1/2 cup filtered water
Directions

Combine the blueberries, water, sugar and lemon juice in a small saucepan. Cook over a medium-high heat for 5 minutes and then turn down to low and simmer for a further 15 minutes until the mixture has thickened.

Store in the refrigerator and enjoy with pancakes, yoghurt, scones and more!
