These are great small portable bites of energy and nourishment! The gelatin contains two amino acids called glycine and lysine which help support the liver to efficiently remove toxins from the body and helps to absorb calcium and build muscle. These little bites also contains quality fats which help you to feel fuller for longer and keep you feeling satisfied. And the coffee also provides you with a pick me up, so they are great for this time of year to take on road trips with you.
Add the gelatin and water to a small bowl and stir to combine. Set aside to ‘bloom’ and thicken.
Once the gelatin has bloomed add to a small saucepan and heat on low, stir through to dissolve.
Once the gelatin has melted and dissolved, add all ingredients to a quality blender and blitz to combine.
Taste the mixture and adjust if needed.
Pour the mixture into small moulds or line a container with baking paper and pour inside (note this method is less time consuming and easier than the moulds).
Place in the fridge to set, this can take up to 2 hours. If you are using the moulds and have trouble popping the jelly’s out, place it in the freezer for 10 minutes to slightly harden them, this will make it easier to pop out. If you have used the lined container method, pop it out of the container and slice into squares.
Store in the fridge in a glass container or jar.
