Cashew Berry Rice Pudding

You can make this ahead of time for quick and easy breakfast's, snacks or desserts.

What's good about these ingredients?
 Cashew nuts are rich in calcium, magnesium, iron, zinc and folic acid. They help to improve vitality and are great for your teeth and gums.
 Blueberries are rich in anti-oxidants, Vit C and beta-carotene. They are a blood cleanser, improves circulation and benefits our eyesight.
 Figs are rich in calcium, phosphorous, potassium, beta-carotene and Vit C. They can act as a laxative, restorative, increase vitality, clears toxins and one of the highest sources of (plant) calcium.
 Raspberries are also rich in calcium, magnesium, phosphorous, potassium and Vit C. They help to expel mucous, phlegm, toxins, excellent for the female reproductive health and menstrual cramps.
The amount of ingredients will depend on how much you want to make (so adjust as needed)
 1-1/2 cup rice (soaked in whey or filtered water with a pinch of seaweed salt overnight) Or you can also use quinoa
  1-1/2 cup cashews (soaked overnight in whey or filtered water with a pinch of seaweed salt overnight) OR you can use coconut cream, yoghurt or kefir.
 2 tbsp raw honey, pure maple syrup or Maleo
 Fresh seasonal fruits (I used organic berries and figs)
 Optional add ins: Changing Habits Probiotics, Changing Habits Camu Camu Powder, nutmeg, Changing Habits Cinnamon, vanilla, ginger, Changing Habits Cacao Melts, shredded coconut, fresh mint leaves, Changing Habits Chia Seeds, toasted nuts or seeds ect.

Rinse and drain the rice well. Add the rice to a small saucepan and cover with filitered water and cook on medium heat until cooked to your liking.

Rinse and drain the cashews well. Add to a blender or thermomix and add just enough water to make a cashew cream consistency.

Once the rice is cooked, rinse and drain and allow to cool.

Add rice, cashew cream, sweetener, fruit of choice and additional add ins of your choice and mix until combined well.

Taste the mixture and adjust if needed.

You can serve warm or place into glass jars and chill for later.
