Cherry Ripe Honey Chocolate!

This is a perfect lunchbox treat, to enjoy at home or to gob-smack any visitors. They will not believe that it is home made and super nourishing for your bodyl. Yes, chocolate CAN be good for you! It is dairy, nut and gluten free, as well as being paleo and vegan friendly!

Yields1 ServingDifficultyBeginner
80g raw honey (or more if you have a sweet toothed audience!)
 100g coconut oil
A generous pinch of Changing Habits Seaweed Salt
A handful of goji berries (enough to sprinkle over the top of chocolate)
A handful of finely desiccated coconut (enough to sprinkle over the top of chocolate)
1

Using a pot or double boiler (if you have one) on a low heat melt the cacao melts, salt and coconut oil together until smooth, continuously stirring.

2

Reduce the heat even further and add the honey and mix well together. Ensure they are all combined quite well, otherwise the honey will sink to the bottom when setting.

3

Line a tray or dish (whatever you have!) with baking paper and poor the mix in.

4

Lastly, sprinkle with goji berries and coconut.

5

Allow to set in the fridge if you're patient, or freezer if you're impatient!

6

This can be kept in the freezer and eaten straight from there. Some people prefer it to be a little harder (leave in freezer), others like it softer (leave in fridge).

7

This chocolate is absolutely beautiful, so soak it up and enjoy!
