This is a perfect lunchbox treat, to enjoy at home or to gob-smack any visitors. They will not believe that it is home made and super nourishing for your bodyl. Yes, chocolate CAN be good for you! It is dairy, nut and gluten free, as well as being paleo and vegan friendly!
Using a pot or double boiler (if you have one) on a low heat melt the cacao melts, salt and coconut oil together until smooth, continuously stirring.
Reduce the heat even further and add the honey and mix well together. Ensure they are all combined quite well, otherwise the honey will sink to the bottom when setting.
Line a tray or dish (whatever you have!) with baking paper and poor the mix in.
Lastly, sprinkle with goji berries and coconut.
Allow to set in the fridge if you're patient, or freezer if you're impatient!
This can be kept in the freezer and eaten straight from there. Some people prefer it to be a little harder (leave in freezer), others like it softer (leave in fridge).
