Coconut Impossible Pie

This is an easy one bowl recipe - perfect for unexpected guests

 2 cups coconut milk
 1 cup desiccated coconut
 4 organic eggs
 1/2 cup Coconut oil
 1/2 tsp Ground nutmeg

Preheat oven to 180°C & line a 25cm pie dish with baking paper.

Place all ingredients in a food processor & blend until well combined.

Bake for 45 Minutes, or until a skewer comes out clean when inserted.
