Crustless Silverbeet & Goats Feta Quiche

This is a great idea for breakfast, lunch or a weeknight dinner!

 1 bunch of spring onion
 400 g silverbeet, chopped finely
 8 eggs
 3 sprigs of fresh tarragon, finely chopped
 1 bunch parsley, finely chopped
 1/3 cup goats feta

Line a glass tray with baking paper and preheat oven to 180C

Melt coconut oil in a medium frypan over moderate heat. Add spring onion and cook for 1 minute. Add silverbeet and herbs and cook for a further 2 minutes or until liquid evaporates. Remove from heat.

In a large bowl, beat eggs, salt and pepper until light and fluffy. Stir in silverbeet and feta.

Pour the mixture into the prepared tray and cook for 40 Minutes to 50 Minutes or until the egg is set
