Grate all veggies and add to a large, clean glass bowl.
Sprinkle the salt over the veggies along with the water and culture (if adding)
Mix together with a spoon or use your clean hands.
Scoop everything into your chosen (preferably steralised) glass jars and press the mixture down so the liquid is covering the veggies. Use chopped carrots or cabbage leaves to weigh the veggies down under the liquid.
Close the jar and clean off any excess veggies.
Place in a clean, dark cupboard and allow to culture for up to 7 -10 days. After 3-4 days check the mixture and burp the jars if needed. Taste the mixture and if it’s to your liking place in the fridge, however if you like yours tangier and even more probiotic rich, leave the jar out so it can continue to culture, and taste every few days until you reach your desired preference
Store in the fridge
This is the final product. Enjoy mixed through salads, with eggs and sautéed greens, with sausages, spinach and avocado or simply straight off the spoon!
