Dairy Free Chocolate Panna Cotta

A delicious but healthy treat you can even have for breakfast!

Yields4 ServingsDifficultyBeginner
 One can coconut cream
 30g your choice sweetener (honey, Changing Habits Rapadura Sugar, coconut palm) or 10-15 drops stevia
 2 tbsp coconut oil
 3 tsp Vanilla essence or seeds from one vanilla pod
 1 tbsp Changing Habits Gelatin mixed in 1/4 cup water

Melt down all but gelatin in a medium to low heated pan until combined, constantly stirring.

Add gelatin, and keep stirring until all well combined. Using a heat proof blender or with a stick blender, blend on high until all is well combined. If your blender isn't heat proof, allow mix to cool for a couple of minutes then blend.

Have a taste and make sure your taste buds don't need a little more sweetness.

Divide evenly into your choice of holders! Little cups or mugs, muffin trays or in a cake tray and slice when cooled.

Allow to cool for 2-3 hours, or until firm ?.

    Do the cacao nibs melt or hold their form? Not all my kids like them so might need to leave out. Thankyou my 5 yr old just saw the pic and asked me to make it now.

    what an amazing dessert! served with fresh strawberries.
    I used cacao butter & cacao powder in place of the melts, worked perfectly. I intend to try again omitting the cacao powder and adding lemon zest and juice……excited!
