Easy Thai Fish Cakes

This is a quick and easy weekday dinner or lunch box idea for the kids!

 500 g white fleshed fish, cooked (or sustainable tinned tuna)
 1 organic egg
 1 tbsp coconut flour
 1 lime, juice & vest
 1 bunch coriander, chopped

Place all ingredients in a thermomix or food processor and blend until well combined

In a large saucepan over medium heat, melt the coconut oil

Ladle the fish cakes into the pan and cook until golden brown

4

Serve with steamed greens and citrus

      Hi Julie, anything boneless would do the job. I would also recommend asking your seafood monger for a sustainable fish too 🙂
