Emmer Wheat Pancakes

These pancakes are a healthy alternative for brekkie, or even just as a snack!

Yields2 ServingsDifficultyBeginner
 2 tsp baking powder
 1/4 cup coconut oil to cook with (a generous amount!)
 1 free range/organic egg
 3/4 cup organic milk (cow, goat, coconut or nut)

Mix all dry ingredients together in a bowl.

Mix all wet ingredients together in another bowl.

Add dry ingredients to wet ingredients and mix until smooth.

Heat a large frying pan over medium heat. Add ghee, butter or coconut oil for frying. Pour some of the mixture into the pan and cook on one side until it starts to bubble, then flip. Continue with the rest of the mixture.

Perfect topped with sweet or savoury i.e. yoghurt, fruit, honey, nuts, seeds, eggs.
