Halloumi and Vegetable Skewers with a Sun-dried Tomato Tapenade

With BBQ season approaching, why not whip up a batch of these Halloumi and Veg Skewers with a delicious sun-dried tomato tapenade? Even the non-vegetarians will be impressed!

Ingredients
Sun-dried Tomato Tapenade
 1 cup sun-dried (or semi-dried) tomatoes
 2 tbsp fresh basil
 1 clove garlic
 1 tbsp fresh rosemary
 Half a brown onion, chopped
 1/4 cup roasted cashews
 4 tbsp olive oil
Skewers
 8 bamboo cooking skewers
 360 g organic halloumi (2 packets)
 Half a Spanish onion
 250 g cherry tomatoes
 1 capsicum
 10 button mushrooms
 1 small zucchini
 2 tbsp olive oil (for cooking)
Directions
Sun-dried Tomato Tapenade

Place all ingredients in a food processor/Thermomix and blitz until finely chopped. There will be lots left over, which can be stored in the refrigerator. If you want to make enough for this recipe only, simply halve the tapenade ingredients.

Skewers

Chop all of the skewer ingredients into similar-sized pieces.

Thread each skewer with alternating ingredients.

Place the skewers in an oiled pan on a medium-high heat or on a BBQ. Grill each side until slightly charred.

Serve with the sun-dried tomato tapenade drizzled over the top, and a side salad.
