Herb Crusted Fish Fillets

Simple but delicious! Serve with steamed vegetables or salad for a healthy, balanced meal.

Ingredients
 4 white fish fillets
 1/4 cup almond meal
 2 cloves garlic, crushed
 Zest of 1 lemon
 1 tbsp fresh flat leaf parsley, chopped
 1 tbsp fresh basil, chopped
 1 tbsp fresh thyme
 1 tbsp grass-fed butter
Directions

Preheat oven to 200 degrees celsius.

Place the fish fillets onto a lined baking tray and season with salt and pepper.

Combine the rest of the ingredients, except for the butter, in a bowl. Add the melted butter at the end and mix in well with fingertips.

Spread the herb mixture onto each fillet, pressing down firmly.

Place in the oven for approximately 20 minutes until the crust is golden. It may need longer if using a thicker cut of fish.

Serve with salad or vegetables.
