This zesty little treat is the perfect little snack to have with a cup of tea or coffee.
Preheat oven to 170 degrees Celcius.
Combine ricotta, rapadura sugar, coconut oil, eggs, vanilla and juice and zest of lemons in a bowl. Mix well.
Stir through the rest of the ingredients and mix well.
Transfer the mixture into a cake tin lined with baking paper and garnish with some thin lemon slices on top if you like.
Bake for approximately 35 minutes or until cooked through.
