Lime & Fig Cheesecake

Grain Free, Gluten Free, Dairy Free

Base Ingredients
 1 Cup (150g) Pecans
 1 Cup (150g) Sultanas (raisins)
Topping Ingredients
 300g cashews
 180g dried figs
 50g Coconut Oil
 1/4 cup Maleo or maple syrup.
 The juice of 2 limes
 1/2 cup filtered water
Base Method
1

Grind the pecans and sultanas in the thermomix or food processor until it resembles a flour.

Then press into a small spring formed pan and set aside

Topping Method

Add the cashews to thermomix/food processor, grind until fine breadcrumbs.

Melt coconut oil if not liquid already.

Add all other ingredients until smooth, adding coconut oil last and make sure everything is combined completely.

The mixture should be thick and creamy.

Scoop it onto the crust base and spread evenly and smoothly.

Place into refrigerator covered for 24hrs to develop all the flavours.
