What is Rapadura?

Rapadura is the pure juice extracted from the sugar cane (using a press), which is then evaporated over low heats, whilst being stirred with paddles, then ground to produce a grainy sugar. It has not been cooked at high heats nor spun to change it into crystals and the molasses has not been separated from the sugar. It is produced organically, and does not contain chemicals or anti-caking agents.

‘Rapadura’ can also be called Panela, Raspadura, Chancaca or Piloncillo, depending on where it is made.

Rapadura is a whole food product which can vary according to sugar cane variety, soil type and weather. This is why one batch of Rapadura may be lighter or darker than the last batch.

Because Rapadura is not separated from the molasses and is not subject to being heated at high temperatures, (it is dehydrated at a low heat), the vitamins and minerals have been retained.

Rapadura syrup – known as Maleo

Maleo syrup is made by combining filtered water with Changing Habits Rapadura Sugar. It is heated on a very low temperature so as not to destroy any of the nutrition. Use this syrup in baking, smoothies and in raw desserts.

Use 2 cups of Rapadura sugar to 1 cup of water – dissolve in a saucepan on low heat or in Thermomix for 5 minutes at 50 degrees C. Pour into glass jar and store in fridge.

Rapadura sugar can be used cup for cup as an alternative to sugar in all your baking and cooking.

If you are unused to the grainy texture of Rapadura, it can be ground in the Thermomix (or a powerful blender) to a fine powder to help it dissolve better.

In Colombia, Rapadura is not only used as a sweetener for cooking and baking, it is also dissolved in water and ice is added along with a squeeze of lemon then served as an energy boosting summer drink. On cold nights, the same recipe applies using hot water.

Storage instructions: Keep in airtight pouch and store in cool, dry place.

Differences in sugars

‘Raw’ sugar is not really raw – it has been heated at high temperatures and a lot of the minerals and vitamins are gone. It’s better than refined sugar because it has a little of the molasses still clinging to it. Some sugar is sold as ‘organic’ raw sugar, and people think this means it’s unrefined – all it really means is that it’s grown with organic agricultural methods, then refined as usual… the juice (molasses) has been mostly removed, and there’s not really much goodness in it.

White sugar is refined much further… the raw sugar is centrifuged again, then the crystals are dissolved, boiled, and crystallized again into white sugar, and any lingering goodness has completely disappeared.

Brown sugar is just white sugar mixed with molasses.
