Macadamia and White Chocolate Flourless Cookies

These delicious cookies and the perfect accompaniment with a cup of tea or coffee. Not only are they flour-free, dairy-free and refined sugar-free - they are 100% guilt free!

Ingredients

 1 cup cashew butter
 1 cup peanut butter
 2 eggs
 1 tbsp vanilla essence
 1/2 tsp baking powder
 3/4 cup macadamia nuts
 1 tbsp coconut oil
 1/4 cup honey
White Chocolate
 1 tbsp coconut oil
 50 g cacao butter buttons
 1 tbsp honey
 2 tbsp coconut cream
 1/2 tsp vanilla
 pinch salt

Preheat oven to 160 degrees Celsius.

Place all ingredients in a bowl and mix well (best to use fingers as it can get a little sticky).

Line a baking tray with baking paper. Place spoonfuls of the mixture onto the tray, using wet fingers, press into cookie shapes.

Bake for 15 minutes or until golden brown. Remove and cool.

Place all white chocolate ingredients in a pot over a low heat and stir through until all ingredients have completely melted. Remove to cool.

Transfer white chocolate mixture in a food processor and blitz on high for about 30 seconds.

Drizzle the white chocolate over the cooled cookies and immediately place in the fridge for the chocolate to set.
