Mango and Lime Jellies

Yields15 Servings
 2 large mangos-flesh
 1 cup filtered water (to bloom gelatin)
 Juice of one lime
 Zest of one lime

Blend lime juice and mango together until smooth. (this should make about 1.5 cups of liquid) Set aside

Bloom gelatine in water for roughly 5 minutes, add to a saucepan

On low heat melt the gelatin down, remove from heat

Add gelatin to mango/lime mixture and stir to combine

Line a tray with baking paper and pour in the mixture. It should be about an inch thick

Sprinkle lightly with the grated lime zest

Set in the fridge for one to two hours.

Cut into desired size pieces and Enjoy!
