Paleo Banana Muffins or Bread

These were enjoyed by everyone at Kristy's son's 2nd year birthday party, along with the Chocolate Quinoa Muffins and Savoury Muffins. This has been claimed to be one of the 'best banana breads'.

 3 ripe bananas mashed
 1/4 cup coconut oil
 1 tbsp raw honey
 1/2 cup coconut milk
 1/2 tsp baking soda
 1 tsp Changing Habits homemade Vanilla Essence
 1/2 cup coconut flour
 1/4 cup almond meal
 4 free range and organic (if possible) eggs

Preheat the oven to 180C. Grease and line a cake tin or cupcake patty tray.

Mix all ingredients well and pour into the tin evenly.

Cook in the oven for 30-40 mins (cake) or 20 mins (cupcakes) or until golden brown.

Remove from the oven and allow to cool.

Serve warm.
