Prawn And Veggie Rice Paper Rolls

These veggie & prawn rice paper rolls make a healthy & delicious lunch or snack.

 1/2 carrot, finely julienned
 1 cabbage leaf, finely julienned
 1 baby cos lettuce
 2 avocados, sliced
 1/2 cup homemade pesto or mayonnaise
 300g prawns, peeled, cleaned and cooked
 1/2 cucumber, finely sliced
 Rice paper rolls
 Coconut aminos or tamari for dipping
 1 lime, quartered

Fill a shallow bowl with warm water.

Dip one rice paper wrapper into the water until it begins to soften, then remove and place on top of a clean tea towel.

Now begin to add all of your ingredients, start with the lettuce as the base and top with chosen veggies, avocado, prawns and drizzle with a touch of pesto and/ or may and a sprinkle of lime juice.

Begin to wrap the roll (not to tight, but tight enough so it doesn’t fall apart), you can follow the instructions on the packet of how to wrap the roll properly if you get stuck.

Repeat and use as many rice paper wrappers as needed to use up all the remaining ingredients, you can mix and match fillings as you desire.

Serve with rice paper rolls whole or cut in half with the rest of the lime and tamari or coconut amino for the dipping sauce.
