Salted Caramel Macadamia Banana Ice Cream (Dairy Free)

This is one of my favourite ice-creams to make. It is so easy to make with a thermomix

Caramel Sauce Ingredients
 100g Coconut Cream
 1 Changing Habits Vanilla Pod, scraped
Ice Cream Ingredients
 450g frozen bananas, chopped in 1 inch pieces
 2 handfuls of raw macadamias
 a good drizzle of caramel sauce (reserve at least half for topping)
Thermomix Caramel Sauce Method
1

Place all ingredients in TM Bowl and cook for 3 mins | 100C | speed 2.

Pour sauce in a jug and set aside

Thermomix Ice Cream Method

Add all ingredients to the TM bowl and mix 30 sec | speed 9, using the spatula to push it onto the blades.

Serve ice cream immediately in small bowls. Drizzle with extra caramel sauce, and sprinkle with chopped macadamia nuts.

For a little touch of saltiness to the caramel, sprinkle with some seaweed salt (optional).

Normal Method

If you don't have a thermomix, simply make the caramel sauce on the stove top until cooked through.

For the ice cream method place in a good quality food processor until it comes together like ice cream.

Serve the caramel sauce on top of the banana ice-cream.

Suggested Serving: Sprinkle with crushed raw or roasted macadamia nuts, a sprinkle of cinnamon or some chopped Changing Habits Cacao Melts
