Simple Breakfast Frittata

This is a great breakfast or lunch box recipe filled with healthy vegetables and protein

 1 sweet potatoes cut into cubes
 2 zucchini, cut into cubes
 2 tomatoes, sliced
 1/2 Capsicum, sliced
 1 garlic clove, crushed
 6 organic eggs
 1/3 cup milk of your choice
 100 baby spinach or kale
 Pinch of dulse flakes (optional)
 Changing Habits Seaweed Salt and pepper to taste

Preheat oven to 180C and grease a glass tray or skillet

Mix the zucchini, sweet potato and capsicum with garlic and oil in a large bowl

Roast vegetables in a glass tray in the oven for around 20 Minutes to 30 Minutes

Meanwhile, whisk eggs, milk, salt and pepper in a small bowl

Once the vegetables are cooked, remove vegetables from oven and cover with spinach and egg mixture

Return to oven and cook for a further 20 Minutes or until set

    What oil?? I can’t see any oil mentioned in ingredients.
