Spinach & Bacon Fritters

This is a great nut-free lunch box idea for kids!

Yields6 ServingsDifficultyBeginner
 6 eggs
 3/4 cup coconut flour
 1 1/2 cup chopped greens (spinach, kale)
 1/4 cup herbs, finely chopped
 1 cup nitrate-free bacon
 3/4 tsp baking soda
 Changing Habits Seaweed Salt and pepper to taste

In a large bowl, combine the eggs, coconut flour and baking soda

Add all remaining ingredients and stir until well combined

In a large saucepan, heat a tablespoon of coconut oil

Ladle the desired amount of mixture into the frypan and cook fritter for around 2-3 minutes before flipping and repeating
