Sweet Berry Omelette

This simple twist on the standard omelette recipe allows you to enjoy a sweet breakfast that is still packed with protein

 4 large eggs
 2 tbsp Changing Habits Rapadura Sugar or raw honey
 Juice and zest of 1/2 lemon
 2 tbsp coconut milk
 1 tbsp coconut oil
 1/4 cup berries of your choice (fresh or frozen)

Whisk all ingredients in a bowl except berries until well combined. Stir berries through.

Heat a large frypan over medium heat and add coconut oil or butter

Once the oil has melted, pour the mixture in and cook the omelette
