Chilli Lime Dressing

This dressing brightens up any salad. You could simply steam some organic, free range chicken and make a salad with vegetables, depending on the season you're currently in and what is available at your local farmers market. Right now it's spring, so throw some chopped lettuce and/or cabbage, broccoli, cucumber, sugar snap peas, tomato and zucchini together, and top with avocado. Drizzle the Chilli Lime Dressing over the top. Divine!

 1/4 cup freshly squeezed lime juice
 2 small red chillies, deseeded and finely chopped
 1 clove of garlic, crushed
 1 tbsp fish sauce (optional)

Combine the first four ingredients in a saucepan, place over low heat and stir until sugar is dissolved.

Once cooled, whisk in the oil and fish sauce until combined.

Drizzle over salad.

Store in your fridge in an airtight jar and try and use this within the week.
