Apple and rhubarb Chia Pudding

Make the most of Rhubarb and Fig season with this delicious Chia pudding!

Ingredients
 2 tbsp chia seeds
 1/4 cup water
 1 green apple peeled and diced
 2 sticks rhubarb diced
 1 cup water
 zest of 1 orange
 1 cup coconut yoghurt
 2 figs cut into quarters
Directions

In a small bowl, combine the water and chia seeds. Mix well and place in the refrigerator to set.

Heat a fry-pan over a medium-high heat. Add the apple, rhubarb, rapadura sugar, ginger powder, cinnamon, water and orange zest.

Bring to a boil and continue to boil for 5 minutes, stirring occasionally.

Turn down to medium-low and simmer until the liquid has mostly evaporated and the rhubarb has broken down and the apple is soft. Remove to cool.

In two glasses (or bowl), spoon a layer of coconut yoghurt in each. Then add a layer of the apple and rhubarb mixture. Add another layer of coconut yoghurt. Then add a layer of the chia seed mixture and top with the fig slices.

If you would like it to be a little sweeter, feel free to stir through some honey, rapadura sugar or maple syrup!
