Apple Crumble Biscuits

A delicious twist on the popular traditional apple crumble. Bite - sized pieces of chewy, fruity goodness with hints of caramel. A gluten free, dairy free, refined sugar free, plant based snack to suit everybody!

 2 cups almond meal
 1/8 cup coconut oil (melted)
 2 tbsp almond milk
Apple filling
 4 apples peeled cored and diced
 1/4 cup water
Crumble
 1/4 cup shredded coconut
 1/4 cup macadamias chopped finely
 2 tbsp oats

Preheat oven to 160 degrees celcius.

Place all biscuit ingredients in a food processor or Thermomix and blitz for approximately 20 seconds.

Using a tablespoon, scoop the mixture and roll into a ball. Place on a lined wire rack and press down flat with fingers. Repeat with the rest of the mixture (should make approximately 12).

Bake for 10 minutes or until it begins to brown. Remove to cool slightly. Leave the oven on.

Place the chopped and peeled apple into a fry-pan and turn to a medium heat.

Add the water, sugar and cinnamon.

Cook for approximately 10 minutes until the apple begins to soften and liquid has absorbed.

Spoon the apple mixture onto each of the biscuits, pressing down with fingers.

Combine all crumble ingredients in a small bowl. Mix well.

Press little bits of the crumble on top of the apple mixture.

Return to the oven and cook for a further 5-10 minutes or until the coconut on top begins to brown slightly.

Remove from oven. Serve while warm straight out of the oven. Store leftovers in the refrigerator.
