This broccoli crust is a great gluten-free alternative to a regular pizza base with the added bonus of being made from beautiful nutritious ingredients! Add extra like leftover roast vegetables and/or meat to create your favourite toppings!
Preheat oven to 180 degrees celsius.
Place the broccoli florets into a Thermomix or food processor and blitz until it reaches a fine consistency.
Spread the broccoli on a lined baking tray.
Cook for 10 minutes, toss the broccoli and cook for a further 10 minutes. Remove to cool, keep the oven on.
Transfer the broccoli into a bowl and add the rest of the crust ingredients and mix well.
On a lined baking tray press the crust mixture into either one large or two small round pizza bases.
Place the bases in the oven and cook for 15 minutes or until it begins to brown.
Remove and keep the oven on.
Spread a layer of tomato paste or pesto onto the base/s. Add the rest of the toppings and cook for a further 10-15 minutes.
Serve on it's own or with a side salad. Enjoy!

Any way of making it dairy free??
You could remove the mozzarella from the crust and use cashew cheese for the topping to make this diary free.
