Chicken and sweet potato bites with French onion dipping sauce

These chicken and sweet potato bites will be the hit of any party! Pair them with French onion dipping sauce for the perfect healthy snack or side dish that the kids will love.

Ingredients
Chicken and sweet potato bites
 2 cups sweet potato grated
 500 g chicken mince
 3 shallots diced
 cracked Changing Habits Pepper to taste
 1 egg
 6 tbsp almond meal
 1 tbsp olive oil (for frying)
French onion dipping sauce
 1 tbsp grass-fed butter
 1/2 brown onion diced
 cracked Changing Habits Pepper to taste
 2 tsp coconut aminos (or tamari)
 3/4 cup organic sour cream
To Serve
 Lge handful of leafy greens
 lemon wedges
 1 shallot diced

Preheat oven to 180 degrees Celsius.

Combine all ingredients in a large bowl.

Using a tablespoon, spoon the mixture and roll into a ball and then flatten slightly, set aside. Repeat with the rest of the mixture.

Over a medium-high heat fry the bites for about 3 minutes on each side or until they begin to brown.

Transfer the bites onto a lined baking tray and place in the oven. Cook for 15 minutes or until cooked through.

French Onion Dipping Sauce

Place the butter in a fry pan over a medium-low heat.

When the butter begins to melt add the onion.

Fry for approximately 15 minutes or until soft and fragrant. Remove to cool.

Place the onion and the rest of the french onion ingredients in a food processor, blitz for about 5 seconds or longer if you would prefer it smoother. Add a couple of tablespoons of water if you would like a runnier sauce consistency.

Serve the bites straight out of the oven on a platter with the sauce and add extra diced shallots with a side green salad and lemon wedges.

    Hi wondering could you use coconut cream instead of sour cream? I can’t have dairy

      Hi Alicia, although we haven’t tried it with coconut cream, it should work! Maybe just taste test as you go, you may need to add a little more coconut aminos, onion and salt and pepper.
