Chicken Okonomiyaki

Our take on the traditional Japanese dish Okonomiyaki - a savoury pancake. Packed full of flavour and nutritious ingredients this one is minimal effort for a big wow factor!

Ingredients
Okonomiyaki
 2 cups shredded green cabbage
 1 peeled and grated carrot
 1/4 cup chopped shallots
 1 cup almond meal
 1 tbsp coconut aminos or tamari
 1 cup chicken mince (roughly 150g)
 cracked Changing Habits Pepper to taste
 3 eggs
 1 tsp olive oil (for cooking)
Topping
 2 sheets nori shredded
 2 tbsp toasted sesame seeds
 extra chopped shallots
 squeeze of Homemade BBQ Sauce or Teriyaki or tamari sauce
 lime wedges
 2 tbsp pickled ginger

Preheat oven to 180 degrees Celsius.

Mix all okonomiyaki ingredients (apart from the olive oil) in a bowl.

Heat a small oven-proof frypan over medium-high heat. Flatten mixture into a circle about 2cm thick and cook for approximately 5 minutes.

Place in the oven and cook for a further 10 minutes or until cooked through.

Serve topped with toasted sesame seeds, nori, shallots, mayonaise, BBQ sauce and pickled ginger.

Serve with lime wedges.
