Coconut Crunch Chocolates

A jar of these would make the perfect Valentine's Day gift for a loved one, friend - or just treat yourself!! Made from beautiful, plant-based ingredients.

Ingredients
 1/2 cup shredded coconut
 1 tbsp coconut oil
 3 tbsp coconut cream
 1 tbsp maple syrup (optional)
 1 tsp vanilla essence

Preheat oven to 170 degrees Celsius.

Place shredded coconut on a baking tray lined with baking paper. Bake for 5 minutes or until the coconut begins to brown.

Remove from oven and blitz coconut in a food processor or Thermomix for approximately 10 seconds. Set aside.

Heat a pot over a low heat. Add the coconut oil and the rest of the ingredients (apart from the coconut). Mix until smooth.

Stir through the coconut.

Using a teaspoon, spoon the mixture into chocolate moulds. If you don't have moulds, you can make into a slab and cut into peices once it has set.

Place in the freezer for 30 + minutes or until the chocolates are easy to remove from the moulds.

Transfer chocolates into an air-tight container and store in the refrigerator.
