French Toast

This is a great high protein breakfast to make when the bread is a little stale. It can be served sweet or savoury.

 4 organic free-range eggs
 1/2 cup milk of your choice
 1/2 tsp natural vanilla essence
 6 slices homemade bread

Beat together eggs, milk, vanilla and cinnamon in a shallow container.

Soak bread in mixture for 30 seconds.

Heat skillet and cook bread over medium heat until brown on both sides

Serve with pure maple syrup/yoghurt/fresh fruit/poached apples or pears, nuts or seeds

For a savoury version leave out the vanilla essence and cinnamon and mix into egg mixture any savoury choices such as herbs/chives, parmesan, grated zucchini, seaweed salt, serve on its own or with organic bacon/ham, tomatoes/tomato chutney/rocket/spinach or anything savoury to your liking.
