Macaroni and Cheese with hidden veggies

Kids love Macaroni cheese! So why not make a version that is good for them and their growing bodies with nutrients from hidden veggies cooked in broth!

 300 g macaroni or GF pasta cooked
 100 g Cheddar Cheese grated
 50 g Parmesan grated
 150 g Cauliflower chopped
 1 carrot chopped
 1 zucchini chopped
 1/2 onion, finely chopped
 1 cup chicken or vegetable broth
 75 g butter
 1 1/2 cups milk

Cook pasta on the stove, as per packet instructions. While the pasta is cooking, cook the vegetables in the broth. Puree the vegetables once they are cooked.

Drain pasta, and place into a bowl. Stir the vegetable puree through the pasta.

Melt the butter in a saucepan over medium heat, add the flour and stir making sure there are no lumps, add the milk and gentle bring to the boil until the sauce thickens.

Add the cheese, turn off the heat and stir until combined.

Add the sauce to the pasta and serve.

Serve with extra parmesan cheese sprinkled on top if you wish.

    Hi, can I use spelt flour instead of emmer wheat? Or could you suggest other alternatives that would work? Thanks.
