Silverside Beef

This is the traditional way to make corn beef without using other harmful additives, which are often used in the curing process. The meat will not have its traditional red colour but I guarantee it will taste just as good. What you don't use for dinner will make a wonderful salad compliment or it is great for wraps.

 1 kg bio-dynamic silver side beef
 1 medium sized onion, chopped
 15 whole cloves
 Filtered water (enough to cover the meat)

Place the silver side beef into a container with a lid, stab the meat several times with a sharp skewer.

Rub the combined seaweed salt and rapdura sugar onto the outside of the meat, covering well, sprinkle the rest of the salt onto the beef, cover

Allow the meat to stand for 36 hours in a refrigerator

Rinse the beef and place it into a large pot, cover with water, add the cloves and onion. Bring to the boil, simmer gently for 1-3 hours.

Once cooked to your liking, remove and allow to rest.

Slice and serve with roasted vegetables, salad, steamed vege and make your own homemade white sauce.
