Sushi burgers

Impress at the next dinner party or picnic with these Sushi Burgers. Feel free to mix up the filling and swap the salmon for chicken or tuna!

Ingredients
 2 cups cooked and cooled rice
 1 avocado sliced
 1/2 cucumber sliced
 2 fillets of salmon (skin off)
 juice of 1 lime
 2 tbsp chilli flakes
 2 tbsp tamari or coconut aminos
 cracked Changing Habits Pepper to taste
 4 sheets seaweed sheets/nori

Preheat oven to 180 degrees celsius.

Place the salmon in a baking dish and cook for 20 minutes or until cooked through. Remove to cool.

Place the salmon in a bowl and add the mayonaise, chilli flakes, lime juice, tamari and salt and pepper. Mix well.

Spread the sushi rice on a bench or chopping board. Cut circles into the rice using a small bowl (approximately 8cm in diameter).

Place one of the circles of rice onto a sheet of seaweed. Add about 1/4 of the salmon mixture on top.

Add the avocado and cucumber. Top with another circle of the rice.

Wrap the filling mixture with the seaweed sheet - it may need to be brushed with water to soften.

Repeat with the rest of the mixture.
