Sweet Cinnamon & Pumpkin Pancakes

If you have a sweet tooth you will love this yummy breaky! Tastes so good you would think it was bad for you!

Yields1 ServingDifficultyBeginner
 1/4 cup pumpkin puree
 3 Tbsp nut, coconut or dairy milk
 1 Tbsp honey
 3 eggs
 1 Tbsp butter or coconut oil + extra for cooking
 1/4 cup coconut flour, sifted
 1/2 tsp baking powder
1

Add all ingredients to a food processor and combine until lump free.

Pour the mixture into a bowl.

Heat a large frying pan on medium heat.

Add some butter or oil to the pan an spread all over the pan.

Once heated spoon or ladle some of the mixture onto the frying pan and cook until golden on each side.

Repeat with the rest of the mixture.

Once all the mixture has been used up, place onto plates and garnish with fresh yoghurt, fruits and a drizzle of honey. You can drizzle some nut butter on top too.
