Turmeric Veggie Patties

These little fritters are great for dinner served with a side salad or great option to take to work for lunch or simply eaten as a healthy snack.

Yields1 Serving
 1 medium zucchini, shredded
 2 carrots, shredded
 1/3 cup arrowroot flour, sifted
 1 egg, whisked
 1 tsp cracked Changing Habits Pepper
 1/4 tsp Changing Habits Chilli Powder or cayenne pepper
 2 tsp Changing Habits Changing Habits Turmeric Powder
 coconut oil or olive oil for cooking

Mix all ingredients together in a bowl.

Heat a large frying pan on medium heat.

Melt some oil on the pan and spread evenly over the pan.

Use your hands and roll some of the mixture into patties and place on the pan to cook. Cook 3-4 at a time (depending on the size of your frying pan, but don’t over crowd them).

Flip the patties over and cook both sides until golden and cooked through.

Place onto a plate and continue cooking the rest of the mixture until it has all been used up.

When all the mixture has been cooked, serve with a fresh salad, lemon on the side and homemade pesto, yoghurt dressing, mayonnaise or aioli.
