Zucchini Brownies

You will never know that there is zucchini in these impressive brownies, making it a delicious way to add some more amazing nutrients into your diet!

Ingredients
 1 & 1/2 cups grated zucchini
 1 egg
 1/3 cup melted coconut oil
 1 tsp vanilla essence
 1/2 cup almond milk
 1 tsp baking powder

Preheat oven to 180 degrees Celsius.

Line a loaf tin with baking paper.

Place zucchini, egg, coconut oil, vanilla, almond milk and rapadura sugar in a bowl and mix well.

Add the rest of the ingredients and half of the cacao buttons and mix well.

Transfer the mixture into the loaf tin and sprinkle the rest of the cacao buttons on top.

Bake for approximately 25 minutes until cooked through, but still slightly soft in the middle.

Remove, cool and cut into approximately 8-10 pieces. store in the refrigerator.
